Holiday Crusted SVA Casserole

Growing up on Vaidya Mishra’s Shaka Vanshiya Ayurveda (SVA) protocols, we always had to get creative in the kitchen. Finding recipes was sometimes tricky, and even when we did find one, we had to substitute most of the ingredients anyways! Thanksgiving and Christmas was no exception. When everyone around us was eating turkey and mashed potatoes, we had to find something else that felt special, but also worked with the SVA diet.
My Mom found a recipe in the vegetarian cookbook “Heaven’s Banquet” by Miriam Hospodar, called Nut Paté en Croûte. What was so unique about the recipe was that the filling was encased in a pastry. My Mom used the original recipe as a guideline, but ended up changing most of the filling ingredients, and our holiday dish was born!
This recipe has so many memories attached to it because we usually make it as a family. There are so many different parts of the dish, that each family member has claimed one as their expertise. My Dad is in charge of cracking walnuts, my sister makes the pastry, while my Mom and I tackle the filling. We aren’t often in the kitchen all together, so that makes the memories even more precious.
This recipe has gone through multiple iterations, with one version actually setting the oven on fire from the amount of oil we had added that year. We made sure to not make the same mistake again the next time. However, the pastry was particularly well cooked that year!
This version is just one of many possibilities, and it’s a recipe that can be altered to your own preferences. We hope you enjoy it and can create your own memories with this very special recipe!

Ingredients
Step One – Pastry (any double crust pie pastry recipe can be used)
Version One
1 ⅓ cup spelt flour
⅔ cup oat flour
¼ tsp Soma Salt
4 tsp cold ghee
¾ cup cold water
 
Version Two (Less Gluten)
1 cup buckwheat flour
½ cup barley flour
½ cup oat flour
¼ tsp Soma Salt
4 tsp cold ghee
⅔ cup cold water

Step Two – Rice and Quinoa
3 tbsp organic basmati rice
3 tbsp organic quinoa
2 cardamom pods or ground cardamom
¼ tsp Soma Salt
3 cups water
Step Three – Paneer (Fresh Cheese)
2 litres of whole milk
2 limes – juiced
Step Four – Vegetables
1 carrot – grated
1 small zucchini – grated
1 small broccoli – grated
1 tsp ghee
⅛ tsp turmeric
½ tsp fenugreek seeds
½ tsp cumin seeds
½ tsp Mom’s Masala
½ tsp ground black pepper
2 green thai chilis – finely chopped (or replace Mom’s Masala with Spicy Mom’s Masala)
½ tsp Soma Salt
½ pound crumbled paneer approx. (see previous step)
¼ cup hot water
Step Five – Nuts
⅓ cup chopped walnuts or pecans
Step Six – Herbs
¼ cup fresh chopped basil or 1 tbsp dried basil
2 tbsp fresh chopped rosemary or 1 tbsp dried rosemary
2 tbsp fresh chopped thyme or 1 tbsp dried thyme
2 tsp ghee
Step Seven – Assemble
½ tsp Soma Salt
½ tsp Mom’s Masala
Instructions – 3 hours approx.
Step One – Pastry
Preheat the oven to 375F (190C).
Mix the dry ingredients together in a bowl.
Add the ghee.
Add cold water slowly and mix until it forms a ball of dough. Add a little extra water if the dough feels too hard.
Wrap in plastic and place in the fridge to keep cool.
Step Two – Rice and Quinoa
Rinse the rice and quinoa before adding to a pot.
Add the water, cardamom and salt.
Cook over a medium heat for approximately 15 minutes until cooked.
Strain out the excess water and set to the side.
Step Three – Paneer
Add the milk to a pot on the stove.
Bring to a boil.
Add the juice from half of a lime and stir. The sourness of the lime juice will cause the milk to separate. If it doesn’t, add the juice from another half lime and stir.
If needed, add the juice from another half lime and stir.
What will happen, is the milk will separate into curds and a greenish liquid called whey.
Once this has happened, strain out the liquid using cheese cloth, or a metal strainer.
Set aside.
Step Four – Vegetables
Peel and grate the carrot, zucchini, and broccoli. You should have approximately 2 cups of grated vegetables when finished.
Heat up a pan over medium heat.
Add the ghee.
Once melted, add the turmeric, fenugreek, cumin, Mom’s Masala, black pepper, and chilis.
Saute all of the spices in the ghee until their aroma is released.
Add the crumbled paneer to the hot spices. Mix it all together.
Add the grated vegetables.
Add the salt and stir.
Cover with a lid and cook for approximately 5 minutes.
Add the hot water for extra moisture.
Take them off of the heat when they are just softened (they will cook a little more in the oven).
Set aside.
Step Five – Nuts
Chop the nuts into small pieces.
Dry toast them in a pan over medium heat until lightly browned.
Set aside.
Step Six – Herbs
Heat the ghee over medium heat in a small saucepan.
Add the herbs.
Saute the herbs in the ghee for about a minute, or until their aroma is released.
Set aside.
Step Seven – Assemble
Mix the rice/quinoa, vegetables, nuts, and herbs together in a large bowl or pot.
Add Soma Salt and Mom’s Masala to taste.
Set aside.
Section off ¼ of the dough and set aside.
Roll the rest of the dough out into a large circle, ¼ inch (5mm) thick.
Line a large bowl with parchment paper. (Alternatively, if you don’t want to use baking paper, you can use a metal colander instead of the bowl. The holes in it help prevent the pastry from suctioning to the sides)
Place the circle of dough into the bowl.
Using a knife, cut away any excess along the top. You can also cut out any folds in the dough, otherwise those thicker areas won’t bake as well.
Spoon the filling into the crust.
Roll out the smaller ball of dough into a circle, large enough to cover the filling.
Place over the filling and pinch to seal thoroughly to the other crust.
Cut away any excess.
Place the tray upside down over the bowl.
Flip them over together so the pastry falls out of the bowl onto the baking tray.
Remove the bowl and parchment paper.
Punch holes into the top of the pastry to allow air out while baking.
Place into the preheated oven (375F/190C) and bake. If using the buckwheat/oat/barley recipe, bake for approximately 40 minutes. If using the spelt/oat recipe, bake for approximately 55 mins, or until the crust is slightly browned.
Take the casserole out of the oven and brush with ghee before serving.
This recipe serves four people.
now, it’s time for the cranberry sauce & THE gravy
Cranberry Sauce
12 oz cranberries – rinsed
1 tbsp ghee
⅛ tsp turmeric
1 tsp whole cloves or ½ tsp ground cloves
1 large cinnamon stick or ½ tsp ground cinnamon
1 tsp fresh ginger – grated
1 ¼ tsp ground black pepper
⅓ cup organic cane sugar
½ cup hot water
⅛ tsp Soma Salt
 
Directions:
Rinse the cranberries.
Heat up a saucepan over medium heat.
Add ghee.
Add turmeric, cloves, cinnamon, ginger, and black pepper.
Saute the spices in the ghee until their aroma is released into the air.
Add cranberries to the pan and mix together.
Push the cranberries a little to the side of the pan to create a space for the sugar.
Add the sugar and allow it to caramelize slightly on the bottom of the pan before mixing it together with the cranberries.
Add the hot water and salt.
Cover with a lid and put on low heat.
Slowly cook for about 30 minutes, or until desired consistency.
THE Gravy!
Your casserole will not be complete with the gravy. We have 2 versions for your here. One with rice and mung dahl flour; the second with the yuca (cassava) tuber that will give a rich starchy creamy sauce. Colder temperatures at this time of year call for richer foods, and both these recipes will satisfy the appetite without putting out the agni. We love both! See which one you prefer.

Version 1 using Rice Flour & Mung Dahl
1 tsp ghee
½ tsp Mom’s Masala
2 green thai chilis or ¼ tsp ground black pepper (optional)
¼ cup rice flour
2 cups hot water
2 bay leaves
1 tsp ground Mung daal – toasted (optional but delicious)
¼ tsp Soma Salt
1 tbsp olive oil
Direction:
Heat up the ghee in a small saucepan over medium heat.
Add the Mom’s Masala, and chilis/black pepper if desired.
Saute the spices in the ghee until their aroma is released.
Add the rice flour to the spices and toss it in the spices.
Slowly add the hot water, stirring constantly to avoid clumps.
Put on low heat.
Add the bay leaves and ground mung daal (optional) and stir.
Add salt and olive oil.
Allow to simmer for 5 minutes.
Add extra water if needed.
Once you reach your desired consistency, remove from the heat and serve.
Gravy # 2 using Cassava (Yuca tuber)
1 tsp ghee
½ tsp Mom’s Masala
2 bay leaves
2 green thai chilis or ¼ tsp ground black pepper (optional)
¾ cup Yuca – chopped or grated
2 cups hot water
¼ tsp Soma Salt
1 tbsp olive oil
 
Directions:
Heat up the ghee in a small saucepan over medium heat.
Add the Mom’s Masala, bay leaves, and chilis/black pepper if desired.
Saute the spices in the ghee until their aroma is released.
Add Yuca and toss it in the spices.
Add 1 cup of hot water.
Cover with a lid and cook on med/low heat.
After 5 minutes, add 1 more cup of hot water and put on low heat.
Add olive oil and salt.
Cover and keep cooking for approximately 20 minutes until the Yuca melts into a sauce.
Use a whisk or a fork to break up clumps as it cooks.
Add more hot water if necessary.
Once you reach your desired consistency, remove from the heat and serve. ENJOY!

~ what you need to know ~

One thing I can tell you having treated just about any disease you can think of over the past 35 years is that 1) the name of the disease doesn’t tell you much regarding how it should be treated, 2) the underlying causes are different in each person, even if you are treating the same disease in any two patients, and 3) the underlying root causes are many. There is rarely one root cause to any disease or symptom you can think of. 

And this is especially true when you are treating Fibromyalgia. First of all, the name ‘fibromyalgia’ doesn’t tell you much at all — it means you have widespread muscle pain and tenderness. But it doesn’t tell you why you have the widespread pain.

What is especially important in treating fibromyalgia is that you have to make sure you address each patient differently, as the underlying root causes will be different and unique in each person you treat. And finally, it is important to note that the roots of the problems stem way back into the person’s early childhood, with layer upon layer of imbalances which have never been identified and corrected and instead have only been swept under the rug by using pain killers or medicines to take away the various symptoms, causing theses imbalances to fester and eventually blossom into a much more complicated and serious disease which could have been prevented had it been properly addressed in the very early stages. 

What happens over time is that too many layers have built up and too many toxins have accumulated which now have travelled to each of the 7 tissues, wreaking havoc and pain in each of the tissues they settle in. For example you may experience severe muscle pain and inflammation as the toxins sit in the muscle tissue, or deep burning pain throughout the whole body as the acidic toxins burn the nerve tissue.

And this is why most people aren’t getting adequate relief. You can’t use a cookie cutter approach to treating fibromyalgia since every person has their own unique history of layers of imbalances which have been set in place during the course of their lifetime.

And this is also why it is even difficult for me to prescribe our protocol for treating fibromyalgia. Because there is none. But here is a general guideline of how I might address a typical fibromyalgia patient who seeks out my care. 

First, we would want to see what happened to their gut micro biome, since many disease processes start here. Did that patient take too many antibiotics, immunizations, birth control pills, or steroids throughout their life, which would have paved the way for inflammation as their friendly bacteria died off, resulting in yeast overgrowth, leaky gut and other chronic infections in the gut?

Next, we would want to see the condition of the liver, since if it is very toxic then it will heat up as it holds onto the acid toxins, spilling out inflammation throughout the body since the liver makes the blood from the food you eat. If the liver is hot then the blood becomes hot, causing pain and inflammation.

Once the liver is hot and angry when the food comes into it for processing, it oxidizes it and turns it into a poison, known as ama visha in Ayurveda. This hot and reactive toxin, which results from the improper digestion and combustion of the food, due to its inflammatory nature can create systemic inflammation throughout the body, but it can also burn any of the 7 tissues as it comes into contact with them. It can also go into the organs and glands, and can even burn the ojas, which is a compound which gives us great strength and stamina. It can even go into the malas, or waste products and create problems there and everywhere else it goes.

Let me clarify this point further: once the food leaves the digestive tract it is absorbed systematically through 7 tissues, the blood plasma, the blood, muscle, fat, bone, bone marrow, and reproductive fluids. So it’s important that you eat very healthy food and that you digest it properly. If the food is unhealthy, such as refined white sugar, processed vegetable and seed oils, and processed foods, then the toxins produced from these poor quality foods create inflammation as they pollute each of the 7 tissues they travel through.

And at the same time, if the liver is very hot and reactive from eating a toxic diet and/or taking too many pharmaceuticals or nutraceuticals, then even good food will turn into ama visha or poison as the hot angry liver oxidizes the food instead of intelligently processing it the way it’s supposed to. Once the liver has a temper tantrum on the food and turns it into hot acidic poison, then this poison creates lots of burning and inflammation in each of the 7 tissues, causing tremendous muscle pain as it goes into the muscle tissue, nerve pain as the nerves burn up, and overall systemic inflammation as the blood and tissues of the body heat up.

So in these cases, you must regrow the friendly bacteria, change the diet, cool down the heat in the liver, and then give herbs to clean the various tissues, such as the fat tissue, the bone marrow, the muscle, fat and bone tissue, all of which have been damaged from these hot acidic toxins. 

Once the patient changes their diet and starts their herbal regimen to reverse these long-standing imbalances, then the detox process must begin as the third part of the therapy. All the detox must be performed carefully to pull out the toxins slowly over a long period of time rather than quickly, which could rupture the body’s physical channels as these very dangerous hot toxins come out. And if you rupture the channels then there’s nothing more you can do for that patient, as the toxins are free now to roam throughout the whole body.

And this is the very reason many people aren’t finding the relief they are seeking. The herbs you use must be carefully selected so as to not heat up the liver any more. This is why we can’t use herbs like milk thistle, which creates tremendous heat in the liver as it cleans it out. This is also why we don’t use fish oil, flax oil, turmeric (or even worse, curcumin) capsules, or hot herbs like ashwagandha and shilajit and many of the Ayurvedic herbs which clean the liver. All of these remedies, which might be OK to use in someone who does not have inflammation stemming from an overheated liver (which is a rarity nowadays, by the way), they are definitely not something you would want to use when the person has pain and inflammation in the whole body resulting from the heat which comes from gut and liver disturbances.

We have wonderful herbs which are cooling to the liver, herbal glyceride drop versions of the herbs which won’t heat the liver, and even transdermal creams where the herbs are applied to the skin in a cream and absorb directly into the blood, bypassing the hot angry liver which would oxidize even the herbs and turn them into ama visha the same way it is turning the food into this dangerous poison.

And the really wonderful news is that we have herbs to heal the nerve tissue and the myelin sheath, the covering to the nerve, which got burnt from these very hot toxins, as well as herbs to heal the muscle tissue, clean the fat tissue and lymphatic system and basically herbs to treat whatever else we may encounter in that particular person.

I would like to take the opportunity here to address information that is circulating around the internet which are stating some possible underlying causes of fibromyalgia. Let’s take a look at what some of the experts are saying might be causing fibromyalgia, and at the same time clear up any confusion which might result as we analyze these various causes.

First possible cause: Many say that gluten is causing fibromyalgia and that cutting out gluten may lessen the symptoms of fibromyalgia. Actually, it isn’t the gluten sensitivity that causes the fibromyalgia, but instead the gluten sensitivity is symptomatic of what is wrong with the digestive tract. The protein in gluten is one of the most difficult to digest, so if something is wrong with your digestion it gets turned into a poison in the digestive tract. And yes, quite often we do see the combination of lack of friendly bacteria combined with an overheated liver create a sensitivity to gluten, since it is the friendly bacteria which have to correctly break it down and the liver which has to process it correctly. What we usually find in fibromyalgia, as previously stated, is that the friendly bacteria are depleted and the liver is overheated and instead of processing the gluten correctly it gets turned into ama visha,which, as stated before, is an acidic poison which can burn both the nerve and muscle tissue. Once we fix the gut and the liver and the patient eats non-GMO organic wheat the gluten sensitivity usually goes away.

Second possible cause: Many people state that Candida overgrowth can cause fibromyalgia. Again, let’s make sure we understand this concept as well. There is always some Candida albicans yeast in the intestines, but the friendly bacteria prevents it from overgrowing. Once the friendly bacteria die off the yeast can overgrow as much as it wants, creating inflammation arising out of the gut. The answer here isn’t to kill the Candida, but instead to regrow the friendly bacteria, which will automatically take care of the yeast overgrowth. If you misunderstand this common problem, you might inadvertently begin to take remedies to kill the yeast, such as grapefruit seed extract, caprylic acid, garlic, nystatin, diflucan and others, which will unwittingly kill more of the friendly bacteria. So yes, while we do see Candida overgrowth as one of the several possible layers of imbalances which occur in fibromyalgia, remember that it is just that, one of the possible problems, and not the only problem facing a fibromyalgia patient. And it needs to be addressed correctly.

Third possible cause: Thyroid Issues. Here again, what we find is that the underlying problems which could be weakening the thyroid gland need to be addressed. What we don’t want to do is just have the patients take thyroid medicine, which will actually weaken the thyroid gland since it no longer is called upon to make its hormones. Instead, we want to identify all the reasons that the thyroid is weak, fix them and then support the thyroid gland. By doing so, it may allow some of the pain to go away.

Fourth possible cause: Vitamin Deficiencies. While, yes, this could potentially play a role, we want to make sure we get the majority of these vitamins in food. What we don’t want to do is get very complicated blood work which identifies all of our vitamin deficiencies and then attempt to take the synthetic versions of these vitamins. This is a bad idea: the synthetic vitamins are the toxic versions of the real things and once you swallow them, they create a lot of toxicity in the liver, which has already been compromised and in fact is causing a lot of the fibromyalgia symptoms in the first place. They also cause a lot of heat in the liver since the liver has to process everything you swallow, and these toxic synthetic versions of the vitamins usually aren’t worth the havoc they create.

Fifth possible cause: Mercury Toxicity. Yes, too many of us are harboring mercury, which comes from old mercury silver dental fillings, mercury in the air pollution and certain species of fish and the flu shot still contains mercury which many people get repeatedly year after year, creating a tremendous buildup of mercury. Mercury is a very hot piercing toxin and is responsible for burning both the nerve tissue and the myelin sheath. We have excellent ways of pulling out the mercury, and you must also bind the mercury as it comes out, directing it into the bowel movement and urine. But again, mercury toxicity is only one of a variety of problems we see in our fibromyalgia patients and it, by itself, isn’t the only reason for the fibromyalgia pain. 

Sixth possible cause: Adrenal Fatigue. Same thing here: if the adrenals are exhausted from overworking and prolonged stress, you could experience pain since the adrenal glands produce steroid hormones which take away pain, and if the adrenals become too weak you can feel lots of aches and pains around the body. While there are herbs such as ashwagandha and a few others which can heal the adrenal glands, the best way to heal them is to undergo a prolonged period of very deep rest. Some of our patients have actually had to go on disability in order to spend several months resting to make up for the period of time when the adrenals had been constantly pushed beyond their limits until they finally succumbed to the stress and burned themselves out. 

What you don’t want to do here is to take any adrenal hormones, especially steroids or cortisone, which will actually turn off your adrenals in the end, making the problem much much worse in the long run. And please don’t drink coffee to give yourself energy. It’s like whipping a tired horse. Yes, you may get more energy temporarily, but in the long run you are prolonging the problem as you force the exhausted glands into action. The same is true with chocolate and sugar. Don’t turn to them for a sugar rush as your adrenals will only get worse in the long run. I can’t emphasize this enough: the best thing to heal the adrenal glands effectively is deep prolonged rest. Period. If you can do this you will fix the glands. If you continue to avoid resting, you will prolong your agony by not allowing the adrenals to fully heal.

Seventh possible cause: MTHFR Mutations. This mutation, which occurs in about 40% of the population makes the body less capable of ridding itself of toxins. Many people take methyl B6, methyl-B12 and folic acid to alleviate the symptoms of MTHFR, but again, keep this in mind: our ancestors carried this gene as well — the good news is that they made it through their life just fine; the bad news is that we are surrounding ourself with way too many toxins — over 80,000 to be exact, which our ancestors never had to deal with. The best way to take care of yourself if you have been born with this weakness is to take an herb called guduchi satwa or stem of guduchi. This herb has the capability of completing the detox pathways in the liver which are missing, and it actually can help you make glutathione, which is depleted in those who exhibit the MTHFR gene. Just taking these synthetic vitamins only makes the liver more unhappy, as it now has to break down these toxic synthetic vitamins.

Eighth possible cause: Emotional stress. Grief, anger and hunger can all cause the production of ama visha immediately because they don’t have to go through the process of forming ama and then degrading into ama visha. This is another reason why many people develop aches and pains and fibromyalgia after prolonged emotional stress. We offer our patients many techniques to help them deal with their stress, such as herbal remedies, meditation, yoga, and breathing techniques, to name a few.
VMMT

And finally, the American College of Rheumatology guidelines for the diagnosis of fibromyalgia states that patients must feel pain in at least 11 tender points out of a possible 18, in response to simple pressure. It turns out that these tender points in the body correspond exactly to what are called marma points in Ayurveda. Marma points are vital energy points which when stimulated correctly, can invoke healing as they promote the flow of prana within the body. All the organs and glands need a constant supply of prana flowing to them. By stimulating these delicate marma points through the use of specific transdermal creams combined with gentle touch techniques we are able to facilitate the proper flow of prana to all the organs and glands, which also alleviates pain and suffering. 

We are fortunate that my teacher and mentor, Vaidya Rama Kant Mishra, who spent nearly two decades training me in his family’s lineage of Shaka Vansya Ayurveda, was able to successfully bring hundreds of herbs from India and other countries to make over 500 formulas to use in treating these very serious and difficult to treat diseases. In fact, fibromyalgia was one of the first diseases we tackled together when he first started training me.

So now we have much experience in treating this disease, if you can call it that. I view it more as layers upon layers of imbalances which have been neglected through the years which need to be addressed once and for all. Yes, it’s not as easy as popping a pain pill for instant relief. But by rolling up your sleeves and doing the necessary work which needs to be done in reversing the numerous imbalances, changing your diet and daily routine and cleansing out the impurities that are burning your muscle and nerve fibers, you will experience lasting relief once and for all.

Parkinson’s Disease results from the death of specific brain cells. These nerve cells are located in a part of the brain called the Substantia Nigra. These cells are responsible for making dopamine, a brain chemical which helps to control movement. Without dopamine, the cells that control movement can’t send proper messages to the muscles, which makes it hard to control the muscles. The disease leads to shaking and tremors and trouble walking and moving, and tends to get worse over time. When 80% of dopamine is lost, Parkinson’s Disease symptoms start to occur. 

Parkinson’s Disease most often develops after age 50 and is one of the most common nervous system problems in older adults. Modern medicine does not yet understand why the dopamine-producing nerve cells of the Substantia Nigra begin to die off in some individuals. 

However, in Ayurveda, we have a different understanding, based on what we cognize in the patient’s pulse.

AMAVISHA & GARAVISHA

What we find is that two very hot toxins, known as ama visha and garavisha can burn the delicate neurons in the brain. Amavisha occurs inside your body whenever the food doesn’t digest correctly, which could either come from improper digestion and/or be due to the fact that the food is too heavy. Instead of the food absorbing into your bloodstream, it remains in the digestive tract and rots and ferments, causing a highly acidic toxin which can burn the delicate nerve tissue.

The other type of toxin, known as garavisha, are toxins from outside the body, such as xenobiotics which are air pollution, pesticides, skin care products and the other 80,000 chemicals we have allowed into our environment which can make their way into our bodies.

Garavisha, like amavisha, is also very hot and piercing and can burn its way right through the body’s tissues, and wind up in the nerve tissue, killing and destroying the neurons in the brain.

In fact, it has been shown clinically that over half the patients who present with Parkinson’s had been exposed to pesticides from farming practices. All nasty chemicals have an affinity to go into the fat cells and get stuck there. And…the nerve cells are made of fat. So is the protective covering to the nerve cells, known as the myelin sheath.  

MUCUNA

But as always, everyone comes to this disease in their own unique way, which means that every person has their own reasons for developing this (or any) disease, and all those reasons must be addressed before we use our Ayurvedic pharmacy of herbs, specifically in this case, Mucuna, which helps boost dopamine levels in humans. As you can imagine, this is especially helpful for those with Parkinson’s Disease. So as usual, the ancient doctors of Ayurveda said that before any prescription is written, we must first identify the factors that are bringing about the condition. Investigate and isolate the root cause – and tell them to stop doing those things which are actually creating the imbalance, causing the problem to start with.

So while these two types of toxins could be contributing and causing Parkinson’s Disease, especially when combined with a genetic predisposition, there are potentially dozens of other factors which could lead to this disease as well.

Vegan Diet & Animal Fat

For example, I have personally seen patients who were on an extremely low fat vegan diet suffer Parkinson’s at a very young age as their nerve tissue literally shriveled up from lack of cholesterol in the diet. Again, the nerve tissue is both made up of and uses lots of cholesterol to function correctly. The protective covering to the nerve tissue, known as the myelin sheath is also made of up cholesterol. And cholesterol is abundantly present in the synaptic membranes which aid in nerve signal transmission. This means that the nerve conducts an impulse, but it has to jump from one nerve cell to the next and in between is a gap called the synapse where the signals jump across. And this synapse or gap is loaded with cholesterol. Which is why the ancient seers of Ayurveda recommended lots of whole milk and ghee in the diet. They stated in their textbooks that these were important for the proper development and function of the brain. So in these patients you must change the diet to incorporate good quality fats, such as cultured ghee, boiled whole non-homogenized milk from grass-fed cows or goats, soft curd cheeses, home-made yogurt, olive oil, avocados, nuts and seeds.

Research out of Harvard has shown that consuming 3 or more servings of low fat dairy each day was associated with a higher risk of being diagnosed with Parkinson’s Disease. It might yet take us longer to – once and for all – realize that a low fat diet is actually dangerous to our health. While yes we want to avoid the hydrogenated processed fats, we should be weary of jumping to the conclusion that all fat is bad for us. 

MILK & OJAS 

And the same is true for milk, We raise the cows incorrectly, feed them grains, inject them with antibiotics and hormones, AND homogenize their milk. And on top of all that, we consume the milk incorrectly: we drink it cold, mix it with salty or other foods it shouldn’t be mixed with. We literally poisoning ourselves and it is nothing short of a miracle that the body still tolerates and processes things for a while before it no longer can tolerate it. 

But just because we make all these mistakes when it comes to milk, it doesn’t mean we need to cut out all milk from our diets. We just need to search for non-homogenized milk from grass-fed cows that weren’t fed antibiotics and hormones. Then boil the milk preferably with some spices and take it on an empty stomach. Milk consumed this way is highly nourishing, not only to our nerve and brain cells, but to all the 7 tissues which it nourishes immediately. Unlike any other food you can think of, milk nourishes all our 7 tissues immediately. Usually it may take up to one month to nourish all 7 tissues through a regular diet. 

Milk has the unique quality to absorb rapidly into the body’s tissues and create Ojas, a life-giving compound which keeps us strong and healthy into old age. Any other food you eat takes a month to develop Ojas as it has to slowly make its way through the 7 tissues of the body (blood plasma, blood, muscle, fat, bone, bone marrow and reproductive fluids). The food has to spend 3-5 days in each tissue before it can form Ojas at the end of the 7th tissue. 

Also keep in mind that goat’s milk, taken in the same way (boiled and taken on an empty stomach or cooked into grains without salt) is just as good as cow’s milk. The nutrients in goat’s milk are more bioavailable to us, which means that for example, the fat molecules are even smaller than those found in cow’s milk so they are taken up into the cells much easier than cow’s milk. And it is lighter and easier to digest for those who have a lactose intolerance to cow’s milk. It is even recommended for those who don’t have any issues with cow’s milk because of its numerous health benefits.

OTHER FACTORS

EMF

I have also seen people who are exposed to too many electromagnetic frequencies (EMF’s)and radiation have their neurotransmitters disrupted since this type of toxin can also go deep into the physiology, affecting nerve transmission, neurons and can also create cell death. So in these cases we have to use all of our protocols to help negate the negative effects of these EMF’s and if possible have the patient avoid them as much as possible.

YOUR GUT

And nowadays, even modern medicine is researching disruption of the gut micro biome in possibly playing a role in developing Parkinson’s. This is definitely another underlying factor because the disruption of the friendly bacteria is the first imbalance we see in hundreds of diseases, so while it may be a contributing factor to developing Parkinson’s Disease, we actually see it playing a role in the development of most, if not all diseases.

DOSHAS

In Ayurveda we also look at the role of the 3 doshas, known as Vata, Pitta and Kapha, as they too are out of balance in each and every disease and symptom we suffer from. So it is important to understand what these three doshas are, what they mean for your health, and how to properly balance them, otherwise their imbalances could also play a role in the patient eventually developing Parkinson’s Disease, again, if there is a genetic predisposition to do so.

SLEEP & SUN CYCLES

We always need to look at the bedtime, as the whole body, mind and spirit depends on an early bedtime, since humans were made to be awake when the sun comes up and asleep when the sun goes down. Breaking this very important law of nature also plays a huge role in the development of many of the diseases we hear about.

Time in the sun can boost your dopamine levels as the skin absorbs sunlight and produces Vitamin D, which in turn triggers the production of dopamine as well as serotonin. And in fact a 2018 study found that Vitamin D may protect damage to the neurons that produce dopamine.

It is through advanced pulse diagnosis that we can gain access to this very important type of information which is not available to other types of practitioners. Which is why modern medicine is still in the dark as to what is causing most diseases, whereas we can see clearly in the pulse all of the imbalances leading to these diseases.

So as you can see, with Parkinson’s Disease, it isn’t enough to just take a dopamine-derived medicine or even mucuna, which contains naturally occurring dopamine. If you do that, your results will be minimal. You must at the same time identify and address all the problems which caused you to burn out the neurons in the brain that produce dopamine to prevent further damage and possibly reverse whatever damage has been done so far.

By doing the hard work of actively involving yourself in your health you will reap the benefits that come with developing a strong physiology. I’ve personally taken care of patients who addressed their Parkinson’s in this way and lived long productive lives as they effectively slowed down the progress of their condition.

It is time… time to put down all that is driving us helter-skelter, take a deep breathe, and remember that “to every thing there is a season, and a time to every purpose under the heaven: […] A time to weep and a time to laugh; a time to mourn, and a time to dance” (Ecclesiastes 3:4).

NOW is the time to dance, to surround ourselves with loving family and friends, to “come out of the circle of time, and into the circle of love” (Rumi).

NOW is the time to celebrate each other, in togetherness, in gratitude for the bountiful offerings of Mother Earth – today and everyday; and the abounding joy that surrounds us unconditionally – may we always chose to find it.

And may we open our hearts – in gratitude – to all that is and will be, reminding ourselves that all that is, is perfect – just as it is.

6 Tastes for Balanced Health

According to the basic principles of ayurvedic pharmacology – known as dravyaguna – the natural taste of a food item is very important because it gives you information about what it is going to do in your body, what actions it is going to perform once you ingest it. This is why, in Ayurveda, plants and herbs are first and foremost categorized and evaluated according to their taste. In total, Ayurveda says there are 6 tastes: madhur (sweet); amla (sour); lavan (salty); katu (pungent); tikt (bitter); kashai (astringent).

The first three tastes are known to be vata pacifying (the sutra says: “Tatradia marutam granthi” – the first 3 tastes pacify marut/vata or the air principle). The astringent and pungent tastes pacify Kapha, and the astringent, bitter, and sweet tastes pacify pitta. Cooking a perfectly balanced meal is all about the play and proper combination of these 6 tastes. As Vaidya always said, it is all about “samyog and samskar” – what items you combine with eachother and how.

If you’ve spent some time in the kitchen trying to assemble a dish, you will note that it is not possible to have all 6 tastes all the time in one dish! Or even in a couple of dishes. This is where and why, in Ayurveda, we get chutneys, and accompanying side dishes, sauces, or raw condiments, to help bring in the missing tastes and complete the balancing properties.

It is in this spirit that Vaidya Mishra made these fruit preserves and chutneys. Another important attribute they also carry is making sure that the digestive fire remains sharp and support digestion and assimilation. Read more about each preserve below and choose your favorite. The Sweet Orange and Mango chutney contains a balance of both the sweet (madhur) and sour (amla) tastes, therefore, it pacifies all vata aspects right away – body and mind. But does this not aggravate kapha dosha – since only the bitter, pungent, and astringent tastes pacify kapha while the sweet, sour, and salty aggravate it?

Vaidya’s chutney is made of raw sweet mangos that are known to be astringent, and in this recipe, the astringent taste or “kashai rasa” counter-balances the sweet and sour properties of the chutney keeping kapha in balance.

This chutney is also pitta pacifying as the sutra says: “kashai tikt madhura, pitta manyecho kurvate”- astringent, bitter and sweet tastes all pacify pitta. The chutney contains the astringent (kashai) and the sweet (madhura) tastes that pacify pitta.

So, in a way, we can say that this chutney is almost tridoshic when kapha individuals consume it with enough spices and in moderation!

But beyond doshas, this fruit spread is very balanced because it not only contains premium ingredients but these ingredients have been meticulously put together to bind each other out, so for example, the natural pectin binds the micromolecules of the raw organic sugar so the sugar does not go into the system in a fast-forward fashion but rather at a sustained-release pace, so when you consume it you do not get a sugar high and come back for more after you’ve crashed from your high. With the sustained release of sugar, you satisfy your craving and walk away happy with a small amount! The sugar is also balanced by the ascorbic acid and all the other ingredients.

Prunes have a storied history and a big reputation as ‘nature’s remedy’ for constipation. And no wonder! Prunes are rich in insoluble fiber, as well as the natural laxative sorbitol.

But that’s not the end of the story. Prunes are a great addition to any diet, as they have a long list of other health benefits with the least or zero side-effects. Despite not being part of the Ayurvedic tradition, we should fully adopt them into our daily diet.

Dietary Fiber and Pre-biotics

This tri-doshic (balanced for all body types) prune preserve helps normalize apana agni.  This agni (metabolic fire) governing the colon must be sama (balanced) to do its job of selecting what materials to absorb and what materials to reject in the process of digestion.

Garcinia indica also known as Garcinia cambogia (“vrikshamla” in Sanskrit) is mentioned in the ayurvedic “nighantu”-s (or glossaries) as a vata and kapha dosha pacifying dravya or food ingredient. It is known to enhance absorption due to its thermogenic potency; to sharpen the taste buds, clearing away ama or toxic build-up in the oral cavity; and to make the body lighter because it carries the following 3 rasa-s or tastes: amla (sour), katu (pungent) and kashai (astringent). These 3 rasa-s enhance metabolism in general. More specifically, the amla rasa or sour taste also enhances and supports protein metabolism because it enhances agni in the mamsa dhatu or muscle tissue. In addition, the 3 rasa-s together help clear and unclog the channels too. Garcinia’s first property is “amla” or sour, and we know that the sour taste is “agneya” or thermogenic. Due to this property, it pacifies kapha in all the 7 “dhatu”-s or tissues. But it also pacifies thirst because it pacifies vata in the stomach, samana vata, as well as in the chest or udana vata. In general, it is a wonderful fruit that balances the entire stomach and all the dosha-s in the stomach, enhancing coordination amongst them all: samana vata, pachak pitta, and kledak kapha – the 3 principles which support digestion: a) movement of space and air in the stomach; b) enzymatic levels; c) lubrication levels. When the stomach dosha-s are balanced, so many aspects of overall health also follow suit.

While we may need calcium to nourish our bones and teeth, to help our blood clot, to nourish our nerves so they can send messages, and to help our muscles contract, we definitely don’t want it to accumulate in our bodily tissues. 

And since calcium molecules travel through the bloodstream and are carried by every cell, they could potentially cause calcification in almost any part of the body. And it is this depositing of calcium that is responsible for forming gall stones, kidney stones, arthritic joints and for creating hardening of the arteries. 

This is where kulthi lentils come to the rescue. These lentils, also known as Horse Gram, grow on the hard rocky soil in the Himalayan Mountains and not only are they as hard as rocks, they contain the intelligence to break down calcified formations in our bodies. 

The Charak Samhita, the definitive sourcebook of Ayurveda says that the prabhava or ultimate effect of Kulthi is ashmarinashan. Ashmari means ‘stone’ and nashan means ‘to vanquish.’ When calcium macromolecules in the body start accumulating to form a stone, these molecules of Kulthi behave like an enemy and pulverize them. Gall stones and kidney stones are called ashmari. The ultimate effect or prabhava of Kulthi is therefore known to be ashmarinashan — destroying the enemy, destroying the stones — or any other type of calcification that acts in a hostile manner.

Let’s take a deeper Ayurvedic look at the process of calcification. My teacher and mentor Vaidya Rama Kant Mishra, whose family lineage was known as Shaka Vansya Ayurveda, or SVA, spent 7 years after graduating from Ayurvedic college studying with his father, also a gifted Ayurvedic doctor. By doing so, his father could impart to him all the clinical experience he had gained in his very busy and successful Ayurvedic practice. One such clinical gem he learned was that the process of calcification occurs due to imbalances in the sandhi or gap occurring in the dhatu agni of the bone tissue, known as the asthi-agni. 

Let me explain this a little further — in the body we have 7 tissues, known as dhatus: blood plasma, blood, muscle, fat, bone, bone marrow and reproductive fluids. Each of these tissues gets nourished once food leaves the digestive tract. The food spends 3-5 days in each of the 7 tissues before moving onto the next one. But each tissue actually transforms into the next tissue by way of the digestive fire which occurs in the gap in between the two tissues. So it is in this gap where all of the transformation occurs. And this gap contains a digestive fire, known as the dhatu agni, which creates the transformation from the previous tissue into the next one.

The name of the bone tissue is “asthi.” Therefore the asthi-agni is responsible for all the transformation that occurs within the bone tissue. This agni can be either too low, too high or variable (sometimes low, sometimes high) and when any of these 3 states happen the absorption and transformation of calcium gets compromised, and the calcium goes unused, which starts the calcification process.

The agni in the bone tissue get compromised if you eat synthetic fats (think Canola oil), or too much fat which your body can’t process, causing you to make ama, or toxic buildup in your fat tissue. Toxins from the fat get deposited in the fat tissue. Since the fat tissue constitutes the raw materials for the bone tissue, if it is impaired and not functioning well, then the bone tissue, the next on down the line, will also get impaired. The toxic buildup from the fat tissue gets transmitted to the bone tissue and either puts out or imbalances the dhatu agni of the bone tissue.

You must also not ingest unintelligent calcium from a bad source, such as from eggshells and bone meal, for example, which makes the situation even worse. If your asthi agni is already impaired and you are also ingesting bad calcium that is getting deposited into your bone tissue, you are supporting further calcification problems. 

To add to all this, garvisha, or xenobiotics from pesticides, industrial pollutants, house-cleaning products, preservatives in the diet, and heavy metals, as well as ama visha (food which only partially digested and fermented into an acidic toxin in the digestive tract) can fuse with the unused calcium in your body and form virulent toxic crystals. 

These garvisha or exogenous toxins are a hot and piercing type of toxin and can quickly reach the deepest tissues, including asthi dhatu or the bone tissue. 

These toxic crystals which form from the dumb calcium or lack of proper agni or proper transformation in the bone tissue bind together and result in even more dangerous crystals. 

They sometimes can get deposited in the physical bone or they can float in the bone tissue creating osteopenia or osteoporosis by hindering the proper formation of bones. This toxic brew of ama visha and garvisha combining with calcium can also wind up in our feet as gout, or in our fingers as hard, painful bumpy arthritis nodules or hardening of our arteries and glands.

Vaidya Mishra taught me to recommend that people age 40 and above consume Kulthi lentils twice a week to disintegrate any possible toxic micro crystals floating in their body. 

The Kulthi lentils grow in rocky areas and have the intelligence to break down the calcified crystals of ama visha and gar visha. 

This happens for two reasons: first the lentils can disintegrate and help pull out the unused calcium if someone has been taking dumb calcium. Or, is someone is eating good calcium but has an imbalance in asthi agni, Kulthi can help to correct that imbalance. Even if you are eating good calcium-rich foods you must still have good asthi agni to transform that calcium. Kulthi lentils increases the agni of the bone tissue and disintegrates the calcium deposited there. In this way Kulthi nourishes the bones, breaking existing calcifications and hinders new formations from forming. 

In my practice we teach our patients how to cook with Kulthi lentils, and since they are so great at breaking up toxins we make sure we teach them how to bind the micro toxins so they can be taken out of the body safely and effectively. If the dose is too heavy or you eat them too often the Kulthi can break the stones too quickly and sometimes the disintegrated stones might have sharp edges, which can damage the physical circulatory channels as they pass through and out of the body. Fortunately we are so careful in instructing the patients how to limit the use of the Kulthi lentils to not more than twice a week and at the same time to use the binders to bind the calcium macromolecules to direct them out into the bowel movement.

By using these amazing stone breakers, or Kulthi lentils, I have successfully shown our patients how to break down their kidney stones, gall stones and to even reverse hardening of the arteries.

It is best to contact your SVA practitioner who has training in the use of these powerful lentils so you can eat them in the correct way. Since they are so powerful it’s best to cook 50% Kulthi with 50% mung or masoor lentils along with spices. Combining Kulthi with other lentils is a samyog or intelligent combination that minimizes the potential to overheat the bone tissue, or the asthi dhatu.

It is recommended to use only 2 Tbs of Kulthi per person and to mix it with vegetables, soups, broths, or on rice and other grains. Consume it only twice a week to be on the safe side.

This is yet another powerful tool taught to me by Vaidya Mishra, to help people prevent the negative side effects which come from taking unintelligent calcium, combined with eating an unhealthy diet. Now you know you have some help if you have been diagnosed with kidney stones, gall stones, hardening of the arteries, gout or arthritis. But again, it’s best if you contact an SVA practitioner to make sure you know the best way to treat these conditions so you can be monitored as you gently and effectively take out these dangerous toxins.

Ignite Your Inner Light

During the Darkest Nights of November

It’s that challenging time of the year again when the days become short and dark. The sweet memories of balmy summer nights fade away as the colorful leaves dry up and disappear from the trees. In the past, I used to dread this dark and damp transition time of the year. Thanks to the help of the wisdom of Ayurveda, I have learned to ignite my inner light on most days during the late Autumn and Winter season. Ayurveda focuses on daily routines called dinacharya (and seasonal routines called ritucharya to help prevent health issues –physical, mental, and emotional imbalances. In addition to Ayurveda, I also incorporate my three-year experience of living in Norway to add to the positive aspects of winter living called hygge – a nurturing way to create an experience of being ‘cozy’ something that Scandinavians have uniquely created as an artful way of living in long winter climates that was developed over many generations.

I moved back to the Chicago area almost three years ago shortly before the pandemic hit our world after living on the West Coast over ten years. Spoiled by the mild winters there, I was not looking forward to the intense winters here. I have had to work at creating a different reality by changing my mindset and creatively applying Ayurveda and Norwegian mojo. Here’s how to ignite your inner light:

Being connected and a feeling of belonging is a necessary requirement for both physical and mental health and scientific research shows that isolation is as dangerous to our health as being a smoker and having a poor lifestyle. My mindset meant for me was to use different words that I normally associate with winter – instead of dread and lonely, I use words such as cozy, nourishing, rejuvenating, restful, connective, and contemplative. The winter mindset, much like my Norwegian friends is a positive and fun time, it’s a time where you try to socialize a little bit each day, either inviting people over, going out to a café, taking a class, or attending social activities. When I lived in Norway, everyone baked homemade bread every few days because they would count on having unexpected company. In Norway, no one called to make plans, they stopped by unannounced or you would always be warmly welcomed if you stopped by someone’s home. The older generation held knitting circles – women sitting together, knitting wool sox, hats, and sweaters so that by the holiday time, they had enough to give for gifts. What will you plan to do to socialize during this cold season?

Fire Element – On the day the clocks turn back, is always the most challenging week, so this year I have invited a few friends over to gather and eat together and light lots of candles to create additional warmth. Lighting candles throughout the day and evening is something my Norwegian family taught me. The light of the fire creates a cozy warmth. Last year, I purposely rented an apartment that has a fireplace, there’s something about fire that feels natural and nourishing. The fire element is balancing when the weather is cold and windy (kapha and vata increasing). The wisdom of Ayurveda tells us that opposites balance, and the same increase, so the heat of fire balances the cold and wind. Though not everyone has the luxury to have a fireplace, lighting candles is just as helpful. For health reasons, I do not recommend candles that contain synthetic perfumes due to their toxicity, but instead use the all-natural beeswax or ghee candles.  

I discovered that using ghee candles or ghee lamps refined my experience by uplifting my mood in the winter. Ghee is a purified butter, a golden pure oil that has been used for thousands of years in ancient Vedic and spiritual ceremonies across India and Southeast Asia. You can either purchase a candle made from ghee or you can make your own ghee and purchase cotton wicks to be used in a brass, silver, or copper candle holder. The cotton wicks and brass candle holder made especially for ghee lamps can be purchased at an Indian store or online. If you are a highly sensitive person like I am, you will notice the subtle uplifting benefits of lighting a ghee lamp each morning and in the evening. The ghee light balances your agni, your life energy, and your digestive power. It also soothes the eyes and calms the mind. Fire, also called Agni represents the power and heat of the sun, so it’s a way to connect to the energy of the sun when the sun is farthest away from us. According to ancient Ayurveda ghee lamps purify the environment of stagnant negative energy and produce positive and protection in the environment. In addition, the benefits of ghee light:

  • attract sattvic vibrations
  • bring hope and light in life
  • invites health, wealth, and prosperity
  • contains nanoparticles that nourish the subtle body and channels

Dynamic Movement – Aligning with the Sun – Mentally, I am getting ready to focus on a different type of daily exercise. My daily walks along the beautiful shores of Lake Michigan are not an option for me when it’s too cold, windy, rainy, or icy. However, on mild days, walking in the snow is uplifting. I love walking, so this year, I have invested in a treadmill on days when it’s too cold to walk outside. However, for some, joining a gym would be a more social option. Or, do you love music? Moving, dancing, and stretching to music is a great way to move in the winter, as well as outdoor sports such as snow shoeing, skiing, and ice skating. Yoga classes live or online is also a great way to keep in shape. The most beneficial exercise I do is the Sun Salutations also called Surya Namaskar. This ancient flow of movement connects one with the rays of the Sun, even if you do them inside. In the winter, when we are missing the sunlight, we can connect to the life-giving energy of the sun by doing this flow of positions. Ideally, 13 rounds of Surya Namaskar is recommended to ignite the 13 agnis of the body. I have found this practice to be expansive as well for deepened awareness and growth of consciousness, as I do them in the morning sunlight or cloudy weather either inside or outside with my attention on my body, breath, self, and the Sun. It’s a way to connect to the rhythms of nature and the ever-powerful healing energy of the Sun.

Waking up before dawn – Ancient Ayurveda prescribes waking up 90-minutes before dawn called Brahma Muhurta. When it’s dark out in the early morning, there’s a temptation to stay in a warm bed and sleep in – but don’t – it makes matter worse. According to Ayurveda, sleeping during kapha time 6:00 a.m. to 10:00 a.m. increase the cold, heavy, sticky energy in the body increasing kapha and thereby increasing a tendency toward depression and weight gain. However, it takes practice for the body to get into a routine. One must be willing to go to bed early before 10:00 pm in order to wake up early naturally as well as a lighter dinner early in the evening to help sleep better. The first thing I do is light a ghee lamp and listen to some uplifting Gandharva music to get me going in the wee hours of the morning. All I can say is try it, you will be amazed how good and how productive and healthy you become from this life changing lifestyle tool. 

Studying pure knowledge – the ancient vedic textbook called the Bhagavad Gita says, “even a little of this knowledge alleviates fear and suffering”. It’s a great time to study Ayurveda either as a self-paced program or with the guidance of experienced teachers and fellow students. There are many opportunities to study Ayurveda here at the Online Ayurveda Amritanam Learning Center, or directly with Chandi.com, and/or Ayurveda Living School. Studying Ayurveda is a great support during challenging times in world events as well as personal challenges. It creates a stable basis to learn all about the non- changing aspects of life and come to know the inner bliss that transcends all changing forms.

Evening Activities on long dark nights – it’s necessary to make the effort to plan things so you have something to look forward to. Either a get together with family or friends, a class either online or in person, a creative project or practicing an instrument and have a good book to dive in. For me, my challenge will be to not spend so much time on the computer watching Netflix or social media. 

Vitamin D – make sure you are getting enough Vitamin D due to the lack of sunshine, lack of Vitamin D can contribute to low energy and depression. I recommend a daily Transdermal Vitamin D roll from www.Chandika.com. Last but never least, one of my favorite things is eating heart warm stews when it’s cold out. The smell of spices, beans, and grains simmering on the stove pot is a nourishing way to share food with others. Here’s one of my favorite recipes:

Tridoshic Winter Dahl Recipe

(1 to 2 servings)

1/8 cup whole mung beans

4 ½ cups water

1 teaspoon soma salt

¼ cup chopped sweet potato

1 or 2 teaspoons of ghee or other vegetable oil

½ Thai green chili pepper (not for high pittas)

1 inch chopped fresh ginger

2-3 curry leaves or 1 bay leaf

½ teaspoon of ground turmeric

1 pinch of ground fenugreek

1 pinch of ajwain seed

½ teaspoon cumin seed

1 kale leaf chopped

Fresh ground pepper to taste

Fresh lime juice to taste

Chopped cilantro to garnish

If possible, soak mung beans the night before or a few hours before cooking. In my original recipe on the video, I did not soak, and it took longer to cook.

Sauté ginger and Thai chili for a few minutes, then add cumin and sauté for another minute. Add the mung beans and continue to sauté a few more minutes, add the bay leaf or curry leaves. Add water and salt, fenugreek and ajwain. Bring the mung bean, water, and salt to boil and then lower to medium heat where there is a soft boil. Add the sweet potato. After 30 minutes add the kale and parsley or other vegetables of choice. Continue to cook for an additional 15 or 30 minutes or until the mung beans are completely soft and mushy. Garnish with lime juice, black pepper, and cilantro. Pour over basmati rice or other grain.

I met Vaidya Mishra in 1995 when I was working for MAPI at a very elegant new Ayurveda Store in Bellevue Square Mall in Bellevue Washington. Vaidya came to the store periodically to train the staff on all of the products as well as give consultations. The first day we met, he took my pulse and said, “we both have the same problem, we are in the wrong culture”. That was the introduction to Vaidya, it was like meeting an old friend from the past and from there he became my teacher. His training in the store was in depth about his products and herbs and how they benefit the subdoshas, dhatus, ojas, or reduce ama as well as in depth his diet and nutrition protocols. I was able to sit in with him during consultations to take notes for the patients and learn how to recommend lifestyle, diet, and herbal formulations. In later years, I wrote MAPI newsletters and interviewed Vaidya for the articles on various topics, so it was a wonderful way to study his deep understanding of Ayurveda. I continued to learn from him over the years deepening my knowledge of Transdermal marma therapy and its applications to health and all the many in-depth courses he offered. When he toured in the midwest I was invited to cook for him in Wisconsin and on occasion in Fairfield which was always an honor to cook food for one’s Vaidya.

Some may find Moringa tastes bitter and disagreeable, but that’s not why Vaidya Mishra added Coriander and Green Cardamom to his Moringa Leaf tea recipe. Last week, our newsletter featured Moringa as the “divine plant” that Vaidya Mishra recommended for all – for so many reasons. This week, we continue that conversation with Dr Teitelbaum, who highlights even more properties of this one must-have plant. If you do not have access to the fresh leaves or drumstick fruit, you can try one of Vaidya Mishra’s many wonderful formulations – loose powder, leaf tea, soup mix, soap, or drops – on sale through this week again. Having some form of Moringa at least 2-3 times a week, specially in the Autumn season, is highly recommended as an ayurvedic tool for daily balance through gentle detox and rejuvenation. Why Is It So Good for You?!

So, if you’ve been listening to some of my videos, or have read my thyroid book or heard me speak in a podcast or a lecture, you know by now that we live in a world in which we’ve allowed over 80,000 chemicals into our environment, in the form of air pollution, skin care products, industrial chemicals, and even pharmaceuticals. We add chemicals into our highly processed foods and in our water supply as well. 

These type of chemical toxins are so hot in nature that they can quickly pierce through the 7 tissues and go directly into the bone marrow. In fact, every time we step outside and breathe in the air pollution it goes immediately into the bone marrow.

Every immunization or flu shot you get: the chemicals automatically go into the bone marrow.

Taking medicine for acne: yep, you guessed it: it lands in the bone marrow.

How about the nitrates in your breakfast bacon, or your corned beef sandwich at lunch, or the pepperoni on your pizza? There’s a reason there’s been a ton of research showing how they cause brain tumors and leukemia. Why? Because this is what happens when toxins go that deep into the bone marrow. The problem is this: if these chemicals build up enough they can trigger autoimmune diseases and cancer.t

And it’s bad enough that we have these toxins invading us from outside the body. We also make ama visha, another hot reactive piercing toxin, whenever we don’t digest our food well. And this can wreak the same type of havoc as the gar visha, making a beeline through the various tissues: blood plasma, blood, muscle, fat, bone and landing into the bone marrow.

As depressing as all this may sound, what if I told you there is an antidote to these dangerous chemicals? What if I told you there is actually a food that can also move very fast, like an arrow, in the body, piercing through the blood, muscle, fat, bone and bone marrow, only this one comes to the rescue — cleaning it instead of polluting it more.  

In the Bhava Prakash, a 16th century textbook of Ayurveda, this food is called shigru, which means, “it moves like an arrow” in the body as it rapidly penetrates the tissues where it has a deep detoxifying capability.

So what is this incredible food? And where do we get it? And how can we cook it?

Well, it is known as drumstick! I know when I tell people that name their mind automatically conjures up pictures of a big hearty turkey or chicken drumstick. But this vegetable is actually the long hanging pod of the moringa tree.

The Moringa tree is known as “The Miracle Tree” for good reason. Several parts of the tree are eaten and it has so many vitamins, minerals and amino acids that it is considered one of the most nutritious plants in the world. Moringa leaves contain 24 times more iron than spinach, 16 times more calcium than milk, 9 times the Vitamin A of carrots, many times the potassium of bananas and every essential amino acid your body needs.

And Moringa contains 46, yes 46! powerful antioxidants which can neutralize free radicals before they damage your cells and cause disease.

Most of the time we eat the leaves and the pod – the drumstick – of the moringa tree. Both are detoxifying, cleaning all the tissues leading up to and including the bone marrow. This means that just one bowl of drumstick soup can clean the blood plasma, the blood, the muscle, fat, bone and bone marrow (the first six dhatus, as they are called in Ayurveda).

Because of its effects on cleaning the liver and the blood, it can prevent high cholesterol. In fact studies have shown that it works as well as simvastatin in decreasing cholesterol and triglycerides and it also prevents a buildup of plaque in the arteries. It prevents tumor formation, it can lower blood sugar and sugar in the urine, it can prevent and dissolve kidney stones. It is anti fungal and effective against athlete’s foot. It’s even famous for detoxifying the eyes. And because they enhance fat metabolism they are very good for cellulite, and are able to heal the type of headaches we get from too many toxins sitting in the blood. The list of health benefits go on and on.

Another amazing fact about drumstick is that it is both nourishing and detoxifying at the same time. There are two phases to our lives: sometimes we want to break down the tissues and detoxify, and then other times we want to build up the tissues after the period of detox is done. But this unique vegetable has the capability to do both at the same time, which is highly unusual.

I have a drumstick here — this is what it looks like — it’s about 10-16 inches long, and like our bones, it is somewhat hard on the outside, but the inside is soft and squishy — kind of like our bone marrow, where its health benefits are most pronounced.

Most Indian markets carry drumstick frozen, but if you’re lucky enough like I am to be able to get it fresh, it has even more health benefits.

They can increase heat or pitta in the body and may aggravate Vata since they have a drying capability, so it is not recommended that you eat them more than twice a week, just to be on the safe side.

And here are the moringa leaves. The leaves of the Moringa tree have even more detoxifying capability, so be careful with them as well. In fact, you should avoid both Moringa leaves and drumstick if you are pregnant as it may cause a miscarriage. If you are breastfeeding, you should also avoid Moringa, because of its detoxifying nature. Plus, it will make your milk very bitter and unpalatable for your infant. And even though it is fully packed with nutrients it is at the same time highly detoxifying and is best not to give to babies. Infancy is a time for nurturing and babies should only be fed soma-genic nurturing food such as squashes, oatmeal, rice, etc. We recommend to start introducing a normal adult diet at the age of 5 years and above.

Here is a recipe for Drumstick Soup from my dear friend, Divya Alter, from her cookbook,

“What to Eat For How You Feel: The New Ayurvedic Kitchen (Rizzoli, 2017). 

In a pot, put 9 two-inch pieces of drumstick, cover it with 4 cups of spring water, and add 3 peeled and chopped taro root, 1/2 tsp each of ghee, turmeric, cumin, coriander and fennel, 6 curry leaves, salt and pepper. Let simmer for about 20-30 minutes, mashing the drumsticks and taro root towards the end of the cooking. Strain into a bowl and serve with fresh squeezed lime.

This recipe will make enough for two people. And even though it is used for detox, it is extremely delicious at the same time. 

And you can cook the fresh moringa leaves in the same way you cook spinach — just take the leaves off the hard stem, rinse them several times, and then incorporate them into soups, stews, dahl and kitcheri.

Both the leaves and the drumstick pods should be cooked and not eaten raw or drank as a juice. Cook the drumstick with cumin and curry leaves to decrease their inherent bitterness. 

If you don’t have an Indian market near you, it is quite easy nowadays to get dried moringa leaves to be used in soup or made into a tea, so you can still receive the health benefits of this amazing tree.

Eating moringa leaves or the pod are a must in our highly toxic world to prevent serious disease from occurring. I’m sure you’ll feel a surge of strength after eating this miracle food.
