6 Tastes for Balanced Health

According to the basic principles of ayurvedic pharmacology – known as dravyaguna – the natural taste of a food item is very important because it gives you information about what it is going to do in your body, what actions it is going to perform once you ingest it. This is why, in Ayurveda, plants and herbs are first and foremost categorized and evaluated according to their taste. In total, Ayurveda says there are 6 tastes: madhur (sweet); amla (sour); lavan (salty); katu (pungent); tikt (bitter); kashai (astringent).

The first three tastes are known to be vata pacifying (the sutra says: “Tatradia marutam granthi” – the first 3 tastes pacify marut/vata or the air principle). The astringent and pungent tastes pacify Kapha, and the astringent, bitter, and sweet tastes pacify pitta. Cooking a perfectly balanced meal is all about the play and proper combination of these 6 tastes. As Vaidya always said, it is all about “samyog and samskar” – what items you combine with eachother and how.

If you’ve spent some time in the kitchen trying to assemble a dish, you will note that it is not possible to have all 6 tastes all the time in one dish! Or even in a couple of dishes. This is where and why, in Ayurveda, we get chutneys, and accompanying side dishes, sauces, or raw condiments, to help bring in the missing tastes and complete the balancing properties.

It is in this spirit that Vaidya Mishra made these fruit preserves and chutneys. Another important attribute they also carry is making sure that the digestive fire remains sharp and support digestion and assimilation. Read more about each preserve below and choose your favorite. The Sweet Orange and Mango chutney contains a balance of both the sweet (madhur) and sour (amla) tastes, therefore, it pacifies all vata aspects right away – body and mind. But does this not aggravate kapha dosha – since only the bitter, pungent, and astringent tastes pacify kapha while the sweet, sour, and salty aggravate it?

Vaidya’s chutney is made of raw sweet mangos that are known to be astringent, and in this recipe, the astringent taste or “kashai rasa” counter-balances the sweet and sour properties of the chutney keeping kapha in balance.

This chutney is also pitta pacifying as the sutra says: “kashai tikt madhura, pitta manyecho kurvate”- astringent, bitter and sweet tastes all pacify pitta. The chutney contains the astringent (kashai) and the sweet (madhura) tastes that pacify pitta.

So, in a way, we can say that this chutney is almost tridoshic when kapha individuals consume it with enough spices and in moderation!

But beyond doshas, this fruit spread is very balanced because it not only contains premium ingredients but these ingredients have been meticulously put together to bind each other out, so for example, the natural pectin binds the micromolecules of the raw organic sugar so the sugar does not go into the system in a fast-forward fashion but rather at a sustained-release pace, so when you consume it you do not get a sugar high and come back for more after you’ve crashed from your high. With the sustained release of sugar, you satisfy your craving and walk away happy with a small amount! The sugar is also balanced by the ascorbic acid and all the other ingredients.

Prunes have a storied history and a big reputation as ‘nature’s remedy’ for constipation. And no wonder! Prunes are rich in insoluble fiber, as well as the natural laxative sorbitol.

But that’s not the end of the story. Prunes are a great addition to any diet, as they have a long list of other health benefits with the least or zero side-effects. Despite not being part of the Ayurvedic tradition, we should fully adopt them into our daily diet.

Dietary Fiber and Pre-biotics

This tri-doshic (balanced for all body types) prune preserve helps normalize apana agni.  This agni (metabolic fire) governing the colon must be sama (balanced) to do its job of selecting what materials to absorb and what materials to reject in the process of digestion.

Garcinia indica also known as Garcinia cambogia (“vrikshamla” in Sanskrit) is mentioned in the ayurvedic “nighantu”-s (or glossaries) as a vata and kapha dosha pacifying dravya or food ingredient. It is known to enhance absorption due to its thermogenic potency; to sharpen the taste buds, clearing away ama or toxic build-up in the oral cavity; and to make the body lighter because it carries the following 3 rasa-s or tastes: amla (sour), katu (pungent) and kashai (astringent). These 3 rasa-s enhance metabolism in general. More specifically, the amla rasa or sour taste also enhances and supports protein metabolism because it enhances agni in the mamsa dhatu or muscle tissue. In addition, the 3 rasa-s together help clear and unclog the channels too. Garcinia’s first property is “amla” or sour, and we know that the sour taste is “agneya” or thermogenic. Due to this property, it pacifies kapha in all the 7 “dhatu”-s or tissues. But it also pacifies thirst because it pacifies vata in the stomach, samana vata, as well as in the chest or udana vata. In general, it is a wonderful fruit that balances the entire stomach and all the dosha-s in the stomach, enhancing coordination amongst them all: samana vata, pachak pitta, and kledak kapha – the 3 principles which support digestion: a) movement of space and air in the stomach; b) enzymatic levels; c) lubrication levels. When the stomach dosha-s are balanced, so many aspects of overall health also follow suit.

In less than 30 days, I experienced improvement in every health issue, all through sustainable Diet, Self-Care and Lifestyle practices. Not only did Ayurveda get to the root cause of my health issues, it helped me begin unveiling my true self.

By 2011, I started making a complete career change from Accounting and IT to Ayurveda. My ongoing journey of self enlightenment through my Ayurveda practices provided a message loud and clear – You must share your knowledge and wisdom.
